Justin limits his coffee drinking to just two cups a day. His first for the day is the new organic roast Neo served as a double shot, 3/4 flat white in a tulip cup (colloquially known as the ‘Bongo’ in Noosa or ‘Magic’ in cities such as Melbourne). It is strong and flavoursome.

His second coffee of the day, usually consumed on the run between roasting, pouring or paperwork, is a doppio, with dash or milk or cream.

“My passion for roasting comes from trying to create the perfect cup of coffee. I love the whole process that goes into making the perfect coffee,” Justin says.

That process starts with the selection of the highest quality green beans, roasting and blending, correct storage of the beans to the ideal grind and pour which results in the perfect extraction and finished product.

“It’s very satisfying seeing the end result from start to finish. It’s made with passion and love. The beans are extremely high quality, our roasting profiles are unique, the rest is a secret,” Justin says.

Anything else required to create the perfect cup of coffee?

“You need to be patient and lots of practise,” he says.
